Good looking grips, I love stag grips on my singleactions.
I usually use Wilson Combat Wood grips on my 1911's, though. I did once have a beautiful set of Sandbar Stags on a Colt 1911, but I found them to be a little too handfilling to suit me, and let them go with that particular 1911 down the gun traders road a long time ago.
One thing to keep in mind, on those grips on the 1911 is make sure your plunger tube is definitely securely staked in, since those grips do not have the little extended edge that captures and supports the plunger tube, like these grips pictured below. Just FYI because over time and hard use, the plunger tube has been know to come loose, usually locking up the safety when it does.
