Smoked turkey recipes
Anybody have a marinade, smoke then roast whole turkey,or just the breast recipe? Got all the hardware but need the master plan
Re: Smoked turkey recipes
No marinate necessary. Just season the turkey, smoke it for about 45 minutes on a smoker grill, let it set for 2 days in the fridge, allowing that smoke to penetrate the bird, then finish it in an oven, in a bag.
I have won awards with nothing more than this smoker-grill, Lawry's seasoned salt and Mesquite chips...

Re: Smoked turkey recipes
Will be eating one in about an hour.
What Shrapnel does x2.
However, this time (not always but about 1/2 of the time) I soak in a brine overnight (two nights won't hurt, but at least 12 hours)
I dissolve the following with 2 gallons of water in a big 5 gal round igloo water cooler:
3 cups Kosher salt
2-3 cups of sugar ( I use 1/2 brown sugar, 1/2 regular sugar)
5-10TB of Morton's sugar cure or tender quick (OPTIONAL)
1/2 cup wine (red or white, makes no difference to me)
1/4 cup worcestershire sauce
1/4 cup lemon juice
1 TB of paprika (half-sharp or smoked paprika)
1 TB of Thyme, crushed
1TB of Rosemary, crushed
1TB savory, crushed
3-4 big spoonfulls of minced garlic
1TB onion powder
1TB celery salt
4TB ground black pepper
1/4 cup of moleasses
1/4 cup more or less of honey
After taking out of brine, season with Lawerys salt, lemmon pepper, black pepper, garlic powder, paprika and a little brown sugar.
cut up some apples and onions and cram the cravity full and slap on the smoker!
Depending on smoking equipment, you do not have to cook the bird. I too put in fridge after a good smoke, then slip into baking bag and finish in the oven @ 225-250 until done.

Re: Smoked turkey recipes
Anything seasoned with Lawry's is alright in my book. I've actually graduated to Johnny's. Sharpnel, that turkey looks delicious.

I never smoked a turkey--is that with or without a filter--sorry--just couldn't resist... :)
