Hard to beat butternut squash soup. Here's the recipe I use:
1/4 cup unsalted butter
2 large sweet onions, diced
2 large Granny Smith apples, peeled, cored and diced
1 tsp nutmeg
1/2 tsp allspice
1/2 tsp ground cinnamon
4 medium butternut squashes peeled, halved, seeds removed and diced into 1-inch cubes
3 qts chicken stock
Salt and pepper to taste
In large pot, melt butter and sautee onions and apples until tender. Stir in spices, cook for a minute. Add squash and chicken stock, bring to a boil, then simmer uncovered until squash is tender -- 20-30 minutes. Puree and serve.
Pair this with a grilled Tillamook cheese sammich on homemade bread, and you just about have heaven on earth.

Here's a Breakfast to go with that Bill:
THE JIMMY BUFFET BREAKFAST
Red grapefruit
…cut in half
…sections cut
…rum poured over it
…a little brown sugar sprinkled on top.
When done eating you tip it up and drink the juice.
A nice way to start the day!

Ive never cared for squash but my wife loves it. I made an elk pot roast tonight....amazing

Dang, Jim. Liking your breakfast plan there! I miss grapefruit so much, but can't eat it because of the atorvastatin I am on.

Jim, I have an old,old similar but less combustable recipe:
Only difference is a good dab of butter instead of rum, and bake at 350 till rind edges turn
Brown and curl a bit, I usually serve as a breakfast dessert. The rum recipe sounds a Lot more fun by a wide margin.
