Round yourself up a old pair of sheep shears and cut them in half then shape to fit handle of your choice.
Drill a couple holes in the handle for pins and epoxy it on then drill holes through the steel part for the handle.
You can peen over the pins or cut them shorter and epoxi them in.
Makes a very sharp knife as there is good steel in the shears.
