OT: Need Home Made Ice Cream Recipes

Post by J Miller »

We won an antique hand crank ice cream maker on eBay last week. Now we need some recipes for the ice cream. Any body got any old family recipes they'd be willing to share????

TIA

1 can Eagle Brand
1 pint cream
2 cups sugar
1 tbs salt
1 to 2 oz REAL Mexican vanilla
Fill to the line with whole milk.

Don't do this very often, it's pretty rich (but why else would you make ice cream).

I quart of half and half, 1 quart heavy cream, 1 teaspoonful vanilla, pinch of salt, 1/8 teaspoonful almond extract, and 1 cup sugar. For more than 2 quarts just increase everything in equal proportions. You can add nuts and fruit if you like.

It's OK guys. He got the hand crank model so he can work it off before he puts it on.

Don't forget to soak the barrel overnight to swell it watertight.

I think this is Yancey's Mama’s Vanilla Ice Cream

4 cups whole milk
4 large eggs
2 Tbsp plain flour
2 cups whole milk
2 cups sugar
3 (12 oz) cans evaporated milk
½ tsp salt
2 Tbsp pure vanilla extract

Mix sugar, flour, and salt in top of a double boiler, add 4 cups of milk. Cook over boiling water about 20 minutes, stirring constantly.

Beat eggs in a large bowl, adding two cups of milk to eggs. Gradually stir hot mixture into eggs, then return mixture to the top of the double boiler and cook about 10 more minutes, stirring constantly.

Cool mixture and add three cans of evaporated milk and vanilla. Chill several hours or overnight.

Pour into 4 quart ice cream freezer and freeze.

Half and Half can be substituted for evaporated milk if desired.

Enjoy!
Kind regards,
Tycer

Ooooo three good recipes so far.

Rusty, funny thing is every time the old hand cranker came out when I was a kid I was always assigned the task of cranking it. It should be fun.

Tycer, it's a small galvanized bucket. Maybe a quart, can't be over a 1/2 gal. Never used one of them before. Should be interesting.

When my wife is weight-watching, she substitutes heavy cream for light and sugar for 3 teaspoons of Splenda. 2% milk for whole. Add a little extra vanilla and usually I can't tell the difference.

We used to have a hand crank ice cream maker in the back of the machine shop at work. Individuals would quietly disappear for 5 minutes at a time and do their time on the crank without "THE MAN" becoming wiser. In about 35 minutes we'd have ice cream for all who took their tour of duty on the crank. To keep it extremely simple in the machine shop we used the following recipe.

1 (2) Liter bottle of soda
1 can Eagle Brand milk
1 pint of Half and Half

That's it. Very simple and makes good ice cream. IMO, the best we ever made used Orange soda with a can of chopped pineapple thrown in with the ingredients, made a tropical sherbet type of ice cream. Peach Nehi also made good ice cream, so did Root Beer.

Try it, it's simple and easy.

The best recipe I've tried (and I've tried a lot). It comes from Alton Brown, my favorite Food Network personality. Its a little involved, but includes cooking the custard mixture (a good safety feature) and produces a very creamy, smooth ice cream. Here is the link: http://www.foodnetwork.com/recipes/alto ... index.html

Good luck. Also, its best to chill the mix in the refrigerator before trying to freeze it. Don't be shy about using lots of rock salt to work up a good brine with the ice.

Joe , any of those recipes sound great , I love to add about a half cup of fresh lime juice to any of the vanilla recipes.
Or I just use the sugar lime juice and water and make lime italian ice, much cheaper than the cream and stuff, there are many itialan ice recipes that can be done for practicaly nothing.
