I've never eaten liver. I would try it, if I knew someone that knew how to prepare it. That's with a lot of things though.

If I could go back in time, 40 years or so, when I did such things, I’m sure instead of preparing the liver, I would just prepare myself….with a bunch of whiskey and weed; and I’m sure I’d like just about anything…

Liver and onions in gravy is a common dish over here.

I never liked beef liver, but I love venison liver. Especially with grilled onions.

Re: For folks who don’t like LIVER….?
My dad loves liver. I reminder my mom use to fry beef and chicken livers for him and it smelled so good cooking. I tasted it and it tasted terrible. So, 50 years later I have not eaten it except when it may be ground up in Boudin and I don't taste that funky liver taste then.
Re: For folks who don’t like LIVER….?
We ate liver often as kids, beef liver, cause it was cheap. Mom wasn't a great cook, especially with the liver, lol, couldn't stand the stuff.
But as I learned...deer liver is good, pork liver is better, none of it can be over cooked, more like medium....beef liver still sucks....
The classic liver and onions cooked right is good, maybe the best thing liver is good for is liverwurst, braunswieger is better, basically a smoked liverwurst. A liverwurst and mayo on rye with a slice of american cheese makes a nice sammich!

You can cook tiny pieces of liver in broth style gravy to bolden the flavor without it tasting like full blast liver. It’s good in egg gravy on turkey, dressing, cream potatoes etc

Re: For folks who don’t like LIVER….?
I have a couple of grandkids who wanted to add liver to their diet (apparently lots of good vitamins there). They don't like liver & onions & gravy the way I cook it but they swallow small pieces raw like a pill.
The late wife couldn't stand to be in the same house with frying liver, but now she's gone I have myself a batch every so often. I don't remember it but the folks used to tell the story of me as a kid saying that "liver is my favorite steak!" Mom never bought liver at the store but we always had several meals of liver & onions after dad butchered a beef.
Liver should not be wasted on them that don't appreciate it. Go ahead and feed yours to the dogs doc: they will think you are a great fellow and you will sleep better knowing you didn't waste it.

I remmember Archie Bunker saying the exact same on “All in the Family” many years ago . Edith had cooked the beef tongue and he turned his nose up saying just make me some eggs !Ray wrote: ↑Sat Dec 21, 2024 9:13 pm Withdraw thy foot from thy neighbour's house; lest he be weary of thee, and so hate thee......Proverbs 25:17
There was once a most impertinent neighbour who never quite got the hint that his presence was loathsome especially at dinnertime. Finally, in desperation the reluctant host asked the excrescence exactly what food item he would not eat.
The pestilence replied, "nothing in the category of pluck !" and shivered in disgust.
A few days later the lady of the home came in from the supermarket with bags laden with liver and tripe and headcheese and scrapple and goetta and a massive beef tongue. Her husband held the vacuum sealed tongue up to the light in inspection and asked, "is this what I suspect it is ?" His beloved bride shook her head and replied, "no, from the front end."
So the evening came when they expected the neighbour. The air was rife with the richness of boiling cow taste buds and salivary glands. Sure enough, the bell rang and the unwanted guest came in with nostrils flaring asking, "what are we having ?"
The host replied simply, "beef tongue."
To which the man complained, "I won't eat anything that comes out of an animal's mouth ! Just fry me a couple or three eggs."

My father loved beef liver with onions I on the other hand can’t stand the stuff . When we’d occasionally get KFC many years ago my mother would get chicken livers (if I’m not mistaken they no longer offer them) for my pop and again I can’t stand them . Now I’m sure if I got hungry enough I could eat them and be happy to have them but I’ve yet to reach that point !

If you need to give a dog a pill, stick it in a piece of liverwurst, If the dog doesn't take that, the dog is already dead....

Another vote against making kids eat beef liver. Yuck. But I had seconds when my aunt would cook venison liver.
Re: For folks who don’t like LIVER….?
I was one of those kids!! Yuck. I would still be at the table refusing to eat the small piece of liver until my Mom was done washing all the dishes but mine and then she would let me go. Sixty years plus later I still don’t want any. Don’t like duck or dove either.

I absolutely cannot get a piece of liver into my mouth, not any kind of liver in any form whatsoever. I would lie right down beside a liver and starve to death.

I haven't eaten it any way yet that I didn't like it , except over cooked. Love deer/ calve liver or hog liver with onions . Love chicken livers with ketchup heavily laced with Tabasco sauce.

Caramelized onions and liver, good stuff. But I generally draw the line on age unless I'm in hunting camp, so at home it's only calf liver, lamb liver or fawn liver. I grew up with my father cooking it in hunting camp and there I'll eat any of it, bull or cow elk liver and doe or buck deer or antelope liver.
Tongues, my mother made great stuff with tongue, boiled, peeled and sliced thin on toast with homemade horse radish and mustard, very good.

Beef liver and onions as well as chicken liver are high on my list of favorites.

Liver is best when in the garbage. Forgive me... as my wife heard when she was fixing to make our first meal in our own place... rib-eye - medium rare, potato - baked w/butter & chives, corn on the cob; and if you insist, a little salad. The next day she asked what I wanted for dinner... and I told her the same thing. I told her I'd eat anything she put in front of me except liver & onions, chicken gizzards or sour kraut. While I didn't get steak, potato & corn every night for the next 48 years... I never suffered thru stuff I didn't like! Oh, to have her spaghetti or chicken curry & rice again!

Re: For folks who don’t like LIVER….?
Had it as a kid - ONCE! My grandfather loved liver & onions. Of course Pop ate calf brains too !Dad would barely eat any of it and he ate everything! I always said I'd rather eat a Fram oil filter! Which of course a liver is.
About 20 years ago while we in Quebec fishing one of us found an article , in French, which was roughly translated stating the Canadian F&G people were advising against eating moose, deer, caribou livers & kidneys due to very high heavy metal levels. Again it's a filter so yeah that makes sense.
Now I'll buy chicken livers once in awhile but they get a packet of strawberry jello mixed into the tub. Catfish love em !

Re: For folks who don’t like LIVER….?
I never minded liver as a kid, but as an adult I'm only allowed to have it when my wife isn't home. I recall not having a problem with kidneys either, guess I'm weird.
Re: For folks who don’t like LIVER….?
Doc, all the things I disliked as a kid I eventually learnt to enjoy except for a couple things, and one is liver. Have tried hard to enjoy it more than a few times over the years, even like the smell of it cooking. But I still cant handle a single bite of it. I can eat other offal no problem including tripe, brains and heart.

I'd just give it to someone who liked it if I didn't want to eat it myself . Liver tastes like liver regardless of how you prepare it.

My GrandPa would save deer livers to use for trot-line bait.
In my mind's eye, I can see him in his Liberty overalls sitting in the back of the old handmade wooden boat, slicing deer liver into cubes on a wood boat paddle laid across the gunnels....

I'm old enough to remember when small-town diners would have liver and onions on the menu. Later, when I was in college, I worked in a fancy restaurant as a dishwasher. Liver was on the menu there, and it was *good*. The cooks told me that most people don't know how to cook liver. Wish I could remember their secrets.

Lots of good suggestions here from both those who like liver and those who don’t.
Might try the gravy or braunsweiger or bacon ideas next time. EVERYTHING is better with bacon…!!!
The best, it was putting pills in it to give the dog, and if the dog wouldn’t eat that the dog’s probably dead…
Although I have to say one of our great Pyrenees dogs that has a jaw more or less the same as a small bear, suddenly turns all delicate and can’t possibly swallow a pet treat with a pill inserted into it…

I'd say this is sort of non traditional and to me looks very good. Instead of raw onions I would caramelize them. I do skin the liver I eat, especially if it's from an older animal and I always soak mine and work out the blood----even a water and salt soak works well.
