cooking

Post by mescalero1 »

I was thinking of putting together an all guys cookbook, the stuff that got you through college, hard times, you know, the aquired wisdom of hard times.
You guys think it would sell?

Would it sell? Yes!

This reminds me of my first several months of my career. My wife-to-be was in CA; I was in IL. I'd fly out to see her every other weekend. I didn't want to rack up credit card debt, so in order not to, cut all other costs. For the two weeks in between I would eat nothing but eggs for breakfast, and white bread and peanut butter sandwiches for lunch and dinner. Found I could feed myself on $5 a week!

You need to eat cheap....try oatmeal. Spiced up with peaches, apples, raisins, cinamon, brown sugar, bananas, nuts, dates, blueberries, etc and it makes a nice filling meal.

Also oatmeal mixed with ground beef and a few spices makes a pretty good meatloaf or hamburger or meatball.

I made sausage(venison, caribou, wild boar) soup last night for me and the kid.
3#lbs sausage
4 large yellow onions cut into slivers
a bag of baby carrots
4lbs potatoes cut in semi-large chunks
3 qts chicken stock
1/3 bottle wochestershire sauce

brown meat with the onions in the pot
add all other ingredients
salt and lotsa pepper
simmer for 45 minutes
don't block the pot because the kids are gonna want at it.

Great idea! I'd like some plain ol' home style MANLY cookin' recipes! Easy/Simple. One of the reasons I don't cook much anymore (besides the wife keeps me fed) is way too much preparation time and way too many ingredients! I like SIMPLE. Since I got sober I don't "create" gormet meals in the kitchen anymore  K.I.S.S.

I think Blaine is right, I was going to contribite a brisket recipe; but it never happened.
The simplistic approach was the goal, for me anyway.

I have a couple I could "donate". One is a venison soup I throw together in the winter time and the other I call Poor Mans Pot Roast. I've never written them down. Just kinda play it by ear (or taste) when I do em but I've been wanting another excuse to do a batch or 2.

Real men eat it RAW (mmmmm meat!), or get someone ese to cook it! BTW, when I was doing a lot of shark fishing I would "plug" (just like plugging a watermelon) the shark just above the tail. If there was any oily or creosote taste I'd throw it back 'cause it had been around the harbor too long. Also if I was hungry I'd fillet whatever I caugh, add a bit of salt & pepper and have a snack (deep water ocean fish). Good w/tabasco and crackers.

I lived on this daily ration for a couple of years...

Breakfast - fried egg sandwich with cheap cheese slice on wheat toast OR rolled oats and milk (+/- raisins)
Lunch - Real (not the hydrogenated garbage) peanut-butter and jelly sandwich x2
Supper - Macaroni & Cheese dinner (NEVER 'Kraft' as they are anti-gun  ) +/- chili leftovers

Weekends - Chili (homemade type with meat, tomatoes, peppers, and whatever else wasn't too moldy to throw in the pot) & beer (a couple good brand-name ones then four or five generics).

Of course I was 23 years old then...

This goes back about 30 years ago! I was up to my Aunt and Uncles dairy farm helping them hay for a week. While I was sitting there at the kitchen table for breakfast I looked up and she reached up and grabed this old pigs curly tail to grease the frying pan :o
She was this real hardcore farm women. She said tell me boy, what is the only thing wasted on a prime fat hog? Here I am watching her grease this pan with a darn pig tail that was just hanging on the wall before???? I kinda gulped and said I dont know, its crapper.(actually I used a different word) She said, around here boy the only thing we waste is its SQUEAL!!!!!!!!!!! She looked at me and said you being wrong,I should take you down to the barn and give you a sir single massage! I am thinking oh great thats all I need with her being related and all   Then she smiled at me   I asked my cousion sitting next to me what is that? She said its the belt that goes over the cows back that holds the milker. That was prior to them having the bulk tank! Never forgot either of those things!

Guys, here is the way to do meat loaf in a way that is simple and will delight all that partake. Trust me on this one

One diced small yellow onion
One diced green bell pepper
One bag of Italian croutons (cut a corner off the bag to let the air out and smash them with a mallet)
One can of tomato soup
About two tablespoons of yellow mustard
Some minced garlic
two pounds of good quality ground beef

Mix all of the above in a large bowl, kneding it with your hands.

Place the above in a pan about the size of a bread pan
Put a layer of bacon on top
Cover the bacon with catsup

Back uncovered for a couple of hours at 350.

I made this for the Beloved Redhead and she threw her Grandmother's meat loaf reciepi away and now uses this one.

I am going to speculate that the bacon adds much needed moisture and flavor to what is normally an undramatic dish.
