Never had alligator or mountain lions, but have taken and eaten black bear, moose, barren ground caribou, whitetails, mule deer, elk, Dall sheep, mountain goat, pronghorn, Kodiak Sitka blacktails, beaver, and musk ox. All personally prepared from field to pan, so not subject to the vagaries of assorted butchers. Have also eaten bison from a number of sources.
Number one, no question: musk ox.
Elk, Dall sheep, blacktails tied for second, but a distant second.
Musk ox is the only big game for which my wife has given me standing orders, although we enjoy the variety of all of the above.
Gentlemen,
When my friends and I were younger and hunted more , we gathered a few time a yr for a game feast and to tip a few. We tried everyting. My favorite was fresh venison liver & onions. hours fresh , or quail or dove breast. Its all good if you have the riigt recipes. Just cooked up a pot of Elk chile.
