OT: Favorite Game Meat - UPDATED w/RESULTS!

Hey folks. I thought we had done this before, but I can't find it. (If we have, somebody please give me the link.)

What is your favorite game meat?

RESULTS:
Of the mammals, VENISON and ELK were by far the favorites!
Of the birds, QUAIL and PHEASANT won top honors.

THANKS FOR YOUR INPUT!!! To me, that was fun. :wink:

Dall Sheep, no question about it, followed by moose, which I've eaten a lot of, and elk, which I've only tasted a few times but really enjoyed.

Unless I somehow hit the lottery, I'm pretty sure I'll never get to taste dall sheep, pronghorn, or elk.
Being a poor Florida boy who has only been able to hunt on public land all my life, I've felt myself lucky to even see any deer from my stand, much less shoot a trophy buck.
Years ago I found the easiest kill available during archery season was a yearling doe. So, I killed yearling does. So, I became hooked on the edibility of yearling does. Venison doesn't get any better!
Then, after years of this diet, I finally killed a mature buck.
Yuck!
While it was certainly edible, I noticed a difference immediately from what I was used to. Kinda musky and strong-tasting. And this animal wasn't even killed during the rut.
Now, it's back to archery-killed yearling does again! 8)

Beef! Aged, butterflied, 2lb - 2" thck top sirloin, marinated in lime juice (natural tenderizer), seasoned with Monreal's SteakMate (or equivelant). Then basted with garlic butter while being grilled over a hot Mesquite wood fire for ten minutes on one side and eight minutes on the other....should be medium rare by then. Served with sauted' portabella mushrooms, a baked potato with drawn butter and sour cream, a side of asparagus cooked in virgin olive oil and covered with a hollandaise sauce. Maybe a salad on the side.....

or....substitute fresh venison tenderloin for the top sirloin.

Then again, antelope cross cut and prepared like flank steak is pretty tasty too.

Ground venison coupled with about 1/3 general hamburger, cooked medium with fried onions and cheddar cheese on a grilled sourdough bun is the best burgers I've ever eaten. Add some A-1 sauce...makes my mouth water!

Of course everything needs to be cooked on a grill.

Moose, Bison, Venison, Pig, Black Bear, Yak, of the big game variety.

Quail, Squirrel, rabbits, turkey, duck, pheasant, dove of the normal small game variety.

Raccoon, frog legs, turtle soup, of the more off the norm variety.

I'm assuming this does not include finned game fish or harvested seafood? (I consider them all game but I don't think they count)


Looking at the list, I'm thinking I just like to eat!!

Elk & Buffalo, Venison only when they eat Grape leaves & Raisins. Kinda got spoiled on the last one.

Was hunting Deer on a large Grape Vinyard Ranch. The Deer would live in the Rows of Grapes. They would browse on the tinder young leaves, then in the Fall after harvest, eat the dried Raisins & Grapes on the vines.

Elk for eating, antelope for sausage and jerky, but none of them beats out a good choice+ cut of beef. :mrgreen:

Elk, Venison (white tail or blacktail), Pheasant, Chukar.

I guess if I were to classify which would be on my table for a feast, I would go for pheasant as king of the table. I've had moose and cougar, which were both good, but I never had enough to rank them with my "regulars". Mule deer can be pretty strong if they live in sagebrush IMHO.

That was no joke Nath! The cougar I harvested in Idaho was the best wild game I have ever prepared!

Any wild game that Clara and I have personally killed and prepared for the table.

We particularly like whitetail deer, axis deer, elk, buffalo, mule deer, pheasant, quail and dove.

+1 for danny's suggestion. A fat dry cow elk is hard to beat. Same for piggies. A small fat dry sow makes for some fine eatin'. The only thing boars and bulls are good for are tusks and horns and 'ya can't eat them. :)

I like just about any wild game, really love pheasant and wabbit, but I guess if I had to take my pick of any, it would probably be the white meat from just under the shell, from a 8-12 lb snapper turtle...... yum yum

Rabbit is my favorite. Venison is a close second. Most small birds are decent. I heard yak is delicious, but I dont believe I have ever even seen one much less tasted one.

Bob White quail is my favorite followed closely by frog legs. I prefer my venison to be an old fat doe. Fried turkey is mighty good too. I love rabbit cooked in my old black pot grill. Squirrel is very good but my Daddy taught me to not shoot heads so we could eat the brains and tongue. That tongue tastes like hickory nut goody.

Where I grew up, there was a guy who had an old pump house that he tore down and used to build a fence around a pond with a gas flare burning over it. Millions of bugs. So he went to Louisiana and brought back a hundred pairs of bull frogs. As you can imagine, they stayed in the fence about 24 hours and then migrated to every pond within 4 or 5 miles. We had frogs which measured as much as 36". Man a couple of those legs would make a mess.

nobody but nobody cooks whitetail vension like my mother use to cook..
fooled many a city slicker with it!

I think my wild turkey is pretty darn good....

Had some very good buffalo meat in ted turners restaurant in atlanta....

My favorite meat game is the one where you just barely brown the surface in a pan and then give your wife a big piece and ask "Is this done?"

I love the look on her face.

White Castle hamburger "Sliders"... Yes, they are indeed game. No beef in 'em at all; somebody told me they're some kinda very large rodent.

For small game: ruffed grouse
water fowl : canada goose
big game: young white tail deer
I have eaten others ie moose, bear , cariboo, an assortment of ducks and woodcock, but those are the ones I prefer.

Whitetail tenderloins.Whitetail fresh liver n' onions. Squirrel. Frog legs-green or bull. Morel mushrooms. I know they aren't game but we do hunt them. Fish wise it's Crappie,Bluegill, Flathead cat or Channel cat. Actually I love it all. It's hard to pick a favorite.

Tie: elk and buffalo. I haven't read all responses yet so may be repeating another(s) reasoning, but to modify an old saying, "you taste like what you eat," these two are grazers--essentially "just" grass. Deer and some of the others tend toward "gamey" as they're browsers and eat all sorts of stuff--and it shows up in the meat. Whether that's good or bad depends on your palette, but mine leans toward the grazers. Nothing like buffalo meatloaf or elk-kabob!

Moose, moose and uh moose.....did I mention moose. We have cooked several wild pigs (dry sows) and as long as they aren't real big they are very good in a grill over very low coals for a half a day or so. tom
