JES should be able to rebore a 308 ME to a 338 ME.
He did a 338 WSM and a 358 WSM for me on some BLR takedown barrels, and a 50AK on a Marlin 1895 that I sent him the barreled receiver.

I would go with a 6.5-.284. The long action will let you seat long and really wring the most out of it.
