The first Sunday in June we celebrate the beginning of public meetings of the church here in Pereira. And June 1st 2008 was no exception. This year we held the 'bash' at our place with folks bringing the fixings for sancocho and salad and such and sticking around for games and lunch and a movie (Facing the Giants) and a time of fellowship that stretched clear up 'til 11:30 p.m. - a great time was had by all except the one kid who doesn't like sancocho. More for the rest of us.
You start with a meat based broth - in this case we cooked up a mess of ribs (cut into two - four inch strips across the ribs) with salt, pepper and a bit of garlic paste. Then you toss in some green plantain (chopped or broken into small pieces) then two or three varieties of potatoes and some manioc root along with some field corn on the cob (usually just past the "milk" stage) I'm not sure but think they tossed in some grated squash as well. You cook until the broth thickens up, serve with rice (to ensure there's plenty of carbohydrate) and salad. Good stuff. You can use chicken or ox tail or any other boney meat. We used the ribs 'cause they were cheap and all those bits of exposed bone make an EXCELLENT broth base...

Yep, I gotta know what sancocho is too. Looks like something I might have seen on an episode of Bizarre foods. Not that that's a bad thing.

Joy ain't just showin' molars. And no, most pictures of me don't show a smile 'cause pictures are serious business. Those who know me, however, have no doubt of the joy that resides within and tends to boil over on others as well. Not that I'm a barrel of laughs, just my father's son...
