OT: Why didn't I think of it sooner?!?!?!

Some months ago, someone posted a recipe for Corndog Casserole. It inspired more than a little discausssion and experimentation.

Somewhat later, I posted a recipe I called Kicked UP Corndog Casserole, which added cream-styoe corn and onions to the recipe.

Finally, after all these months, it occurred to me today, why not add cheese? I did and the result was delicious.

Kicked Up Chili Cheese-Dog Casserole

ingredients:

One package Jiffy-Mix Corn Muffin Mix
1 Egg
1/3 cup Milk
1 small onion, finely diced
1 can cream-style corn
1 package Hot Dog wieners, sliced thin
1 can Hot Dog Chili (no beans)
Shredded Cheese of choice (I used Sharp Cheddar)

Method:
Preheat oven and a cast iron skillet with a few tablespoons of oil to 550F.

Prepare the corn muffin mix as per package directions, using the egg and milk. To the batter add the diced onion, corn, an good handful or two of shredded cheese and the sliced hot dog wieners. Stir well.

Heat the can of hot dog chili in a microwave until warm, a minute or so.

When the oven reaches temperature remove the skillet and pour in the batter. If the oil does not sizzle when the batter is added, the casserole will stick.

Pour the Hot Dog Chili on top of the batter, it spreads easier when warm. Leave a small rim of batter uncovered around the edge. Sprinkle on enough cheese to cover the top, and return the skillet to the oven.

Reduce heat to 400*F and bake for 25 minutes or until the batter is set.

H'mmm that's some good eatin'!!
