a friend has invited us to dinner tomorrow featuring a wild turkey he killed in nebraska;
any special instructions for preparing this leaner bird?

I usually have mine either neat or on the rocks! :lol: Seriously, simply placing a pan with pineapple juice on the rack under your bird and basting often with pan juices should result in a nice turkey.

That was good, slimster! I'll take rocks.

Fry it whole. It's a good way to keep wild birds juicy. Not to mention, it tastes great fried.

OSOK:
A question about those injectables. I've never used them because I was afraid the marinade wouldn't evenly diffuse throughout the meat. Is that an incorrect assumption?

When I got mine several years ago, we diid a slow roast with the roaster pan. I mixed up a stuffing of wild rice, water chestnuts,raisins, apples & pears. I used a chicken broth mixed some spices with a little poultry seasoning for a basting solution. That bird went quick, lucky we also had a regular bird to supplement the wild one.
