ANY GOOD "HOW TO's" ON GAME HANDLING AND PROCESSING?

After reading through nemhed's thread, "Processing Deer Survey", I started wondering...

Are there any good books that have info on proper game meat handling and processing? We always field dress, but I had never heard of using cold running water to cool the meat. Are there other tricks I don't know?

The Complete Guide to Game Care & Cookery by Sam Fadala

This book covers many different types of game animals, small game, birds, waterfowl, big game. Some of the recipes are good as well. I highly recommend this book.

I grew up fishing almost everyday. I could clean my own fish from a young age.My parents were not hunters, When I started hunting I just pretended the game animals were fish.
Remove the outer coating (scales, feathers, skin, skin with fur), remove the guts and anus, decide if or not to remove the head, clean away the insides and decide if you want the meat with bones or without.

If you learn by watching rather than reading I strongly recommend the "Ask the Meat Man" DVDs. (As well as a bunch of their other stuff...)
