Off Topic but mighty tasty
I tried a new catfish recipe the other night, and boys, let me tell you it was some kind of good!!
I highly recommend them.
Doc
Catfish cakes
INGREDIENTS
1 pound catfish fillets
1 medium onion, chopped
1 teaspoon prepared yellow mustard
1 tablespoon creamy salad dressing (e.g. Miracle Whip)
1/2 teaspoon Old Bay Seasoning TM ( I used McCormick Seafood Seasoning), or to taste
2 1/2 cups coarsely crushed buttery round crackers
1 egg
1 cup vegetable oil (for frying)
DIRECTIONS
Place catfish in a saucepan with enough water to cover. Bring to a boil, and cook until fish flakes easily with a fork. Drain off water, and mash up the fish. Stir in the onion, mustard, salad dressing, Old Bay™, cracker crumbs and egg. Mix until evenly blended.
Heat oil in a large heavy skillet over medium-high heat. Form the fish mixture into patties, and fry in the hot oil. Drain on paper towels, and serve hot.
I highly recommend them.

Now that does sound tasty. As I have a hard time not trying to improve on recipes, I would dredge the cakes in flour prior to frying to give them a nice golden crust and then serve with a pureed corn sauce. One of the "fancy" restaurants here in Georgia serves their crab cakes with the corn sauce and they are incredible. Thanks for the recipe as I have been looking for catfish recipes. We need to take some catfish (7-8 pounders) out of our pond and I recently made a catfish casserole that was a hit.

Feel free to improvise as much as you like, as long as you report the results. However, the Ritz crackers in the cakes helped form a nice golden brown crust. Try some without the flour and some with the flour, let me know which taste better and look better.Longfin wrote:Now that does sound tasty. 1 tsp minced jalapeño pepper
2 tbsp minced red bell pepper
1 1/2 cups low-sodium chicken stock
1 tbsp honey
1/2 tsp salt
Pinch of black pepper
2 tsp fresh lemon juice
In a medium pan, sauté corn, garlic, and onion in oil over medium heat 1 minute. Add jalapeño and bell pepper. Cook 30 seconds. Add stock. Reduce liquid by half. Season with honey, salt, pepper and lemon juice. Transfer to blender and puree.

That sounds mighty tasty! I'm saving that recipe.
Pardon my ignorance, but on what would one use that tasty sauce?

Doc, you my friend know what catfish should taste like! That was one of the best catfish fries I have ever had. This is perfect... lever guns and good eats in one place!

I suppose if yer gonna dredge them, a 2:1 mix of stone ground cornmeal:flour might compliment the corn sauce. and a couple of tablespoons of bacon drippings mixed with the veggie oil for frying.Longfin wrote:Now that does sound tasty. 2. Add water to pancake batter.
3. Fry catfish.
4. Catch more catfish.
5. I almost forget the French Fries.
