I might have posted this recipe before, but just baked another half batch and had to share it. The flavors in these cookies are amazing. The recipe calls for lard, but I can guarantee you that in old Taos days these were very likely baked with the very best pastry fat you can get -- rendered bear lard, likely from a mean griz! 8)

Nothing like fresh out of the oven cookies.
30/30 Winchester: Not accurate enough fer varmints, barely adequate for small deer; BUT In a 10" to 14" barrelled pistol; is good for moose/elk to 200 yards; ground squirrels to 300 metres

Lost me with the anise seeds :shock: another smell I cannot tolerate: magnolia flowers.
I think a recipe thread is a great idea, wish Doc Hudson still here to contribute.

Here is my Rum Cake recipe:

1 box yellow cake mix
4 eggs (2 eggs if using gluten free mix)
1/2 cup water
1/2 cup cooking oil
1/2 cup spiced rum
(Add 1 teaspoonful cinnamon schnapps if desired)

Mix on low speed for 1 minute or until well blended, then increase speed to high for 6 minutes.

Pour into greased Bundt cake pan and bake for 45 to 50 minutes at 325°F.

At 40 minutes start the sauce.
Sauce:
1/4 cup spiced rum
1/4 cup water
1 cup sugar
1 stick butter

Bring to a boil while constantly stirring. Boil for 2 minutes, must stir constantly. Remove from heat. Bring cake out of the oven and pour sauce over the cake. Cake will decrease in size. Once all liquid is absorbed, about 5 minutes, invert onto a plate. Store covered.

Chopped nuts in the Bundt pan after greasing is optional.

Might have to try without the anise seeds. Be more like a snickerdoodle probably. Rum cake sounds good. I make a variant of the Neiman Marcus cookies--mmmm.

The anise seeds provide only a slight hint of licorice at this concentration.

One of the ggdaughters is coming over today to make these as a Christmas treat for her family. Hopefully there will be a few left over for me. Now regular ole' chocolate chip is probably my favorite but these are not too bad!

Earl, those cherry chocolate cookies look amazing. May have to bake a bunch. The modern maraschino cherry is made using a process developed by an Oregon State horticulture prof -- Ernest Wiegand -- in the 1920s. 8)

Ray, I am on the needles. Metformin pushed my A1C UP! My A1C on it was 10.6, off was 7.9, and glimepiride worked. Then I got an infection and was given Cipro. It killed my pancreas and I went up to over 800 blood glucose in just a short time. Because of not making any insulin anymore, I got on the shots. Right now, my sugar level is 86. I have a Freestyle Libre moniter. Can check without fingerstick at anytime. My A1C was 5.9 last check. I feel better than before going on metformin.
Injections are not for everyone, but they work better for me than most of the pills did. If your Doctor doesn't try you on the older medicines, and insists that something will work when it is obviously not working, then find another Doctor. There are too many options to be stuck with just 2 different pills. My opinion, avoid Doctors from Baylor at all costs. Never met one who I thought knew sic em from come here. The opinions on question and answer sights are more accurate than Baylor Docs in my experience.

The rum I use in the rum cake is as cheap as can be. They put a lot of spices in it to cover for the poor quality rum, and baking it in a cake actually improves the taste by a whole bunch.
