Dove Recipe
Momma Naretto's Dove Recipe
This is the way my dearly departed Italian mother used to prepare the doves my dad and I bagged many years ago.
The ingrediants' list is as follows:
½ pound of salt pork OR ½ pound of prepared pork sausage,
one larg onion,
two or three sprigs of parsley,
half a teaspoon of rosemary OR a couple of sprigs of fresh rosemary if available,
two or three cloves of garlic,
Two stalks of celery OR a large apple,
one cup of wine.
First, you need to bag at least a dozen doves. If no doves, no reason to read further. Feather the whole birds, cut off heads and feet, save gizzards and hearts, wash thoroughly and pick out the birdshot if any. No breasting out. That is wasteful and disrespectful to such a fine game bird. Use the whole bird.
Pull out the bread board, attach a small hand-cranked meat grinder to it, place a catch pan under the grinder. Grind together all the ingrdiants listed above along with the gizzards and hearts (poor people used everything). Mix all the ground ingrediants together along with what is in the catch pan, hereafter called “the stuffing”. Go ahead use your hands but be sure to wash them first. Splash in a little wine in the mix if you like.
Place the doves, breast up, in a roasting dish or pan. Spoon some of the stuffing into each body cavity. About a tablespoon will do it. Spread the rest of the stuffing on and around the birds, cover tightly and bake in a moderate oven (350 degrees) for an hour or so until all the birds are tender. Note the older birds may take a little longer to get tender. Check frequently to make sure that the birds ar not drying out. Another splash of wine will take care of the problem or for you non-drinkers sone chicken stock will work too.
While the birds are cooking, steam some rice. When the birds are ready, place them on a platter along with the rice and pour the stuffing and pan drippings over the rice.
A nice Chenin Blanc goes well.

I had to keep my hunting partner from killing the idiot that did it, while I was bleeding like a stuck pig.

My Mother used to bake the dove in a mushroom soup. She served it with mashed potatoes and wet sugar flavored with a little tea. To this day, I hate iced tea due to her method of making it so sweet that the sugar stayed crunchy. The dove was really good, though.

Years ago I used to work at a place that had a foundry, the guy who ran it was a french bell maker who could really cook good. He pushed the dove breasts down into a dressing he made with a quart of beef blood. They were wonderful.

Southern Sweet Tea is superior.....Better than just adding sugar to cold tea...
